Spuddays. All Day. Every Day.

Okay so last weekend, my roommate and her friend and her family and my other roommate and I all piled into the car and went to Shelley, Idaho for Spuddays. SO MUCH FUN!

So they filled this giant pit of Mashed Potatoes and played tug of war over it.... I think you're probably underestimating how much mashed potatoes there were. They had the mashed potatoes stored in a cement truck for goodness sake! That is A LOT OF POTATOES.

This is our awesome team before. Back when we thought we had a chance at winning.

Well, we lost and I ended up covered in mashed potatoes. Such is life.

My Fellow College Students...

Today I want to talk about how good college eating can be. And let other college students know there are so many ways to eat healthy on a small budget. Mondays are ridiculous. I have a lab from 9:45-11:45 and then math from 2-3 and a lecture from 4:30-7. Needless to say, I have little time to cook. So I have to pack my dinner.

But seriously, doesn't that look good? It's super easy!!!

Exhibit A: Chicken, Salad and Green Peppers.
Chicken: Buy frozen chicken (pretty cheap) and marinade with orange juice, garlic and onion salt. Fry it up and put the leftovers in a bag for the rest of the week!
Salad: Spinach is a lifesaver. Good on anything, full of nutrients and pretty decently priced. Add some feta (the most expensive) and strawberries. Then put poppysead dressing on top. Honestly these ingredients tend to go bad faster. So split the cost with a friend and share! Roommates can be the best when you need to make grocery runs.
Green Peppers: Super yum. Super Healthy. Super Cheap. Like 59 cents cheap.

Apples and peanut butter: Pretty self explanatory. It's a great source of sugar and protein and can be inexpensive if you buy the right apples. That's all for now folks! Tune in next time:)

Week One: Done.

I would like to publicly congratulate myself on making it through my first week of college. I'm alive. I ate well. And I have A's in all my classes so far. So I feel like that's pretty decent.

We made an awesome meal. (My roommate and I)

Studying.

While doing laundry.

Now I'm chilling, eating cookies, on a Saturday night. I know you all wish you were me.;)

Stay tuned for my Sunday Dinner, Spud Days, and more adventures!!!

Why are there so many songs about Rainbows?

One of my cute roommates soaking up the downpour.

It's raining, it's pouring....

AND we left our window open:(

But things always turn out okay.

The best things wait at the end of the rainbow!

P.S. This is the view from my apartment. It's okay to feel a little jealous.

Rain, rain....

Last night a big storm started rolling through. Like the kind of storm that wakes you up because your room is shaking from thunder. Most of the day has been rainy and a little cold. It's been a nice break since the dress code is long pants and it's been pretty warm for walking. Anyway, here are some pictures for your enjoyment.

Sometimes I pack lunch and just hang out between classes. This is proof for my mother that I am eating VERY well. Probably healthier than ever before! (excluding that hot pocket I downed in like two minutes before running to class.)

We started this cool thing in our apartment where we put devos on the fridge every morning of the week. I love it. It's easy for everyone to just check before you leave for the day.

Chore chart fun.

Mandatory, nerdy, cliche, first day of class picture.

And the studying begins. I have to work SO much harder here. But I love it. I waste way less time. Those notes are for my Book of Mormon class. It's super interesting to study as a subject rather than just personally. I'm learning a lot more just by taking notes while I read!

Hope your week is as busy and good as mine has been!

Is this real life?

Welcome to Susie's life: College Edition! I LOVE it here! I love every single one of my roomates (how lucky is that?) and the Spirit on campus is incredible. It's amazing how close I can feel to God just by being on a campus with such high standards. I'm excited to start classes on Monday. Maybe a little stressed but mostly excited.

This is my room. Still a little cluttered but not bad!

I'm talking to my mom here. Basically I'm really happy. I know not every day will be amazing but this is such a fun time of life. About three zillion times better than high school.

Never Forget.

I love my country. Today my heart goes out to those affected by the tragedies of 9/11.

On a lighter note, I made patriotic crepes. Yes I know crepes originate from France but these are red, white and blue crepes!

Oh Baby Baby.

August was a good month to be an aunt. Not that there is ever a bad month but this was especially good. My brother and sister in law brought their little cuties.

Look at that hair! It was so nice of them to visit. Those boys are so dang cute and funny!

And then my sweet little niece was born. Of course I will be uploading more pictures. Especially ones of her in the outfit I got that says "auntie loves me." I am one happy lady.

College is right around the corner and I am SOOOO excited. It means saying goodbye to my family but only for a little bit. I will be visiting frequently if I have any say in the matter:)
